Peanut Butter and Jelly Cupcakes

Tomorrow a friend of Carter's is coming to visit, and she just turned five!  I wanted to make a kid friendly treat to celebrate, and what is more kid friendly than peanut butter and jelly?
These cupcakes are RICH--taste testing it tonight, we each could only eat about half of a cupcake.  You need to have plenty of milk on hand and a friend nearby to share your cupcake.

First I made the frosting base and filling.  Mix creamy peanut butter with a little bit of jet puffed.  A spoonful (or two or three) of sugar helps desserterize it too.

Here is the filling--peanut buttery yumminess!

I used Devil's Food mix, as chocolate and peanut butter go so well together--Reese's Peanut Butter Cup--need I say more?

A bag of peanut butter chips was added to the chocolate cake mix.

A delicious combination!

Here is the fun part--put a small spoonful of batter in the bottom, add a small spoonful of peanut butter filling and a very small dollop of jam (I used Raspberry).  Then top the whole combo with another spoonful of batter (not shown).  Cook according to package directions.

Here is the jelly I used.  I loved raspberries with chocolate!

Take your leftover peanut butter filling mix and dump whipped chocolate frosting into it.  Fold them together until mixed.  Now you have your frosting done.

I drizzled melted chocolate over the top of the frosting and put a small drop of raspberry jam on the very top.
